Method
Step by Step Procedure to Make Perfect and Spicy Grilled Chicken Kabab's
- Place 12 wooden skewers into a huge roasting dish of cold water to steep – this will prevent them from burning.
- Unpeel the garlic and ginger, then thinly cut and place into a big mixing bowl.
- Put yoghurt, passata, 1 tablespoon of oil and the spices, then mix together well.
- Cut the chicken into small pieces chunks and put in to the bowl, then season with a little pinch of sea salt.
- Throw everything together to coat, then cover up with Clingfilm and place in the fridge to preserve for around 2 hours.
- In the meantime, divide and remove seeds from the pepper, then almost chop into chunks, almost the same size as the chicken.
- Take out the skewers from the tray, throw away the water and clean the tray dry.
- Divide and thread the ingredients between your skewers – don’t push them too close together or else they won’t cook correctly, and then place onto the dish.
- Put the grill pan on a high heat up to warm up (or you could cook them under the grill or on the barbecue).
- Sprinkle the skewers with a slight oil, then place onto griddle and cook for 10 to 15 minutes, or until cooked through, turning every 2 minutes to get pleasant and golden on all sides – you may require to work in batches.
- Once cooked, move the kebabs to a platter and dish up with a fresh zingy salad and some rice or flat breads.
